The Hills!!!!!!

When I walked into work today late, I had no idea what would be in there. I knew we had a high profile catering job. But I could have cared less. Because last night I attended the John Varvatos Grammy Party, with all the A-List Celebs. You name it, they were there! Well to my surprise today Picnic was catering for one of my favorite reality TV Stars. Not Snookie of course! But someone with a lot more class and style.

Most of the time, they are a little full of themselves. So I of course was expecting the worst. But to my surprise this "celebrity" was absolutely wonderful. She was curtious and geniuinely fun to be around. When days like this happen, I give it 150%. I wanted to make sure when she left, that she was happy. And would remember me the next time we met.

Ahhhh....Hollywood! Full of surprises! Have a great weekend everybody! Talk to you on Monday!


Dish of The Day (Winter Cauliflower Three Cheese Gratin) Total prep/cool time 40 minutes.

1 Cauliflower (Cut into stems)
1 Cup of Gorgonzola Cheese
1 Cup of Grated Sharp Cheddar
1 Cup of Grated Parmesan Cheese
1 Cup Of Condensed Milk
1 Cup of Evaporated Milk
2 Tbsp of Italian Bread Crumbs

Directions:

In a small pot combine milk and cheeses till thick & creamy. Remove from stove.

In a seperate pot steam Cauliflower in a steamer. Till firm but not to soft. Drain in a collander and let cool.

Place Cauliflower in a casserole or ceramic oven safe dish. Pour cheese mixture into dish. Then sprinkle breads crumbs on top. Bake 25 minutes at 350. Let it cool and serve. Add salt & pepper to taste.


I suggest serving this dish with Pork Chops or Pot Roast!!! Yummy!

The Art Of The Buffet

Have you ever tried to feed 60 different people at once in an hour? Imagine having a dinner party and everyone who attends decides that they want something different. Well thats what we did today. Sixty people-one hour and everyone had to leave happy! I call it "The Art Of The Buffet". Creating a menu that everyone has to like, no matter what. Kudos to the Picnic Team for making it a success.

It's A LOT of work what we do everyday. I find it funny when people say to me, " I want to be chef or caterer". I just look at them and smile knowing that they have no idea what the hell they're getting into.

Make sure whenever you do have a party or event. Create a well balanced menu that all your guests can partake of...and leave smiling!!!

Something Sweet In The Basket

So..I maybe have painted a bad picture of my everyday life at Picnic. I think yesterday was just a bad day. When I started Picnic I wanted to create a company that people could call up for events/parties. And feel at ease, when booking catering. I wanted the process for them to be a PICNIC! Well 7 years later look what we have become.

I am so proud of everyone that works with me. And the great client list I have built up over the years. You are measured by your success in this town by your roster. I would say ours is top notch! With wonderful clients that have made us more successful by word of mouth. I couldn't be any happier with what I do everyday. With everything going on in the world, our lives are a PICNIC! And I hope that we convey that to anyone that comes to see us or calls.

Someone said to me "don't bite the hand that feeds you". Maybe I nibbled just a little bit yesterday. But like I said before, we all have our bad days. When you deal with people on a day to day basis. You always have to keep a smile on your face, even when you want to scream. I have more smile days than scream days. Thank god! It's a job! Yes it has it's glamorous days. But it also has it's ugly days as well! I love to cook and entertain, I also love people. Maybe that has something to do with why everybody loves PICNIC!

Another Day At Picnic!!!

People think working with celebrities is such a PICNIC! It's not!! Take it from me. I am Wade Williams owner of Picnic Cafe & Catering in Culver City. I work in the epicenter of Celebrity...you would think my life was glamorous. Unglamorous is more like it. Having to deal with the ego's, entourages and producers is like a living HELL!!!! And I have to do it everyday....
